Supremo is a size classification, not a quality score. It is the largest commercial screen in the Colombian grading system — beans retained on screen 17/18, roughly 6.75 to 7.1 mm. Excelso is the next size down at 15/16.
Larger, more uniform beans tend to roast more evenly, which is one reason Supremo is a common specification for commercial espresso and filter blends. It says nothing about altitude or cup score on its own, so we supply it with the cup profile and the preparation spelled out.

If your roast profile and grinder are set for a uniform large bean, and your customer specification names Supremo, take Supremo. If you blend across origins and want a lower landed cost per kilogram with a slightly smaller bean, Excelso 15/16 does the same job for most commercial blends.
Both come from the same washed Arabica production. The difference is screen size and price, not category.
