Micro-lots and small lots from named Colombian farms, cupped and scored before they are offered. Every lot carries its farm, variety, process, altitude and cup profile.

A lot is offered as specialty when it is cupped and scored on the SCA scale, traced to a single named farm, and prepared as a separate lot rather than blended into a regional programme. Lot sizes and availability vary by farm, harvest and processing batch, so the current offer changes through the season.
For buyers this means the coffee is repeatable only within its own harvest. Samples are drawn from a specific lot, and the shipment corresponds to the lot you confirm — the lot reference, quantity and quality parameters are agreed in writing before shipment.

| Process | What it does to the cup |
|---|---|
| Washed | Clean and structured; variety and altitude lead the profile. |
| Natural | Fuller body, ripe fruit, heavier sweetness. |
| Honey | Between the two — sweetness of a natural with the clarity of a washed. |
| Thermal-shock washed | Controlled temperature cycling; bright, defined acidity. |
| Naturally fermented | Extended fermentation with the lot’s own yeasts; deeper fruit. |
| Co-fermented | Fermented with fruit or selected cultures — see co-fermented coffees. |
These are high-altitude growing areas between roughly 1,500 and 2,000 metres above sea level, where slow cherry maturation builds the sugars that specialty cupping rewards.
